Raise the heat on the skillet to medium-high add the shrimp paprika salt and cayenne and cook until the shrimp turns pink and is nearly cooked through about 3 minutes.
Saute for 3 to 5 minutes. Cover and remove from heat to allow the spinach to wilt without turning bitter. Add the lemon juice cooked bacon green onions and garlic.
2-4 heaping handfuls of chopped spinach. Meanwhile stir Parmesan cheese into the polenta. Add the shrimp and cook for about 2 minutes on each side or until lightly pink.
Feel free to sprinkle on a little extra goat cheese on top as youre serving. Place polenta in the bottom of a shallow bowl then top with shrimp mixture. Plate the polenta with the shrimp spinach and tomatoes on top serve immediately.
Stir in the spinach and return the garlic to the pan and cook until the shrimp is opaque throughout and the spinach is wilted 1-2 minutes more.
